1 teaspoon garlic powder
1 teaspoon dried Italian seasoning

Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.
Step 2: Wash the zucchini and trim off both ends. Cut the zucchini into 1/2-inch thick half-moon shapes or 1/2-inch thick spears.
Step 3: In a large bowl, combine the cut zucchini, olive oil, garlic powder, Italian seasoning, salt, and pepper. Toss well to ensure all zucchini pieces are evenly coated.
Step 4: Spread the seasoned zucchini in a single layer on the prepared baking sheet. Ensure there is enough space between pieces to allow for proper roasting and browning; use two baking sheets if necessary to avoid overcrowding.
Step 5: Roast for 15-25 minutes, flipping the zucchini halfway through the cooking time. Roast until the zucchini is tender and has lovely caramelized, slightly crispy edges.
