Roasted Garlic and Herb Zucchini and Tomato Medley

2 medium zucchini, chopped into 1-inch pieces
1 pint cherry tomatoes (or 2–3 medium Roma tomatoes, chopped)
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano (or 1 tbsp fresh)
1/2 teaspoon dried basil (or 1 tbsp fresh)
Salt and freshly ground black pepper to taste
Optional: 1/4 cup grated Parmesan cheese
Optional: Fresh parsley for garnish

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, combine the chopped zucchini, cherry tomatoes, and minced garlic.
Step 3: Drizzle with olive oil, then sprinkle with dried oregano, dried basil, salt, and freshly ground black pepper. Toss gently until all the vegetables are evenly coated.
Step 4: Spread the seasoned vegetables in a single layer on the prepared baking sheet. Ensure they are not overcrowded; if necessary, use two baking sheets to allow for proper roasting and browning. Overcrowding will steam the vegetables instead of roasting them.
Step 5: Roast for 20-25 minutes, or until the zucchini is tender-crisp and the tomatoes have softened and begun to burst. For extra browning, you can broil for the last 2-3 minutes, keeping a close eye on them to prevent burning.
Step 6: Remove from the oven. If desired, sprinkle with grated Parmesan cheese and fresh parsley before serving hot.

Notes

Adjust roasting time based on your oven and desired tenderness. For crispier vegetables, avoid overcrowding the baking sheet. This dish is excellent served fresh but also reheats well.
