Robins Egg Oreo Macarons

Ingredients

100g egg whites (aged 24 hours)
90g granulated sugar
130g superfine almond flour
130g powdered sugar
Sky blue gel food coloring
1 tsp cocoa powder mixed with 1 tsp vanilla extract (for speckling)
115g unsalted butter, softened
200g powdered sugar (for filling)
6 Oreo cookies, finely crushed
1 tsp vanilla extract (for filling)
1–2 tbsp heavy cream

Instructions

Step 1: Sift the almond flour and 130g of powdered sugar together into a large bowl. Discard any large almond pieces to ensure smooth robins egg oreo macarons.
Step 2: In a clean glass bowl, whisk the egg whites on medium speed until frothy. Gradually add the granulated sugar while increasing the speed to medium-high.
Step 3: Continue whisking until stiff, glossy peaks form. Add a small amount of blue gel food coloring and whisk just until the color is even.
