Ingredients
2 large sweet potatoes (about 1.5 lbs), peeled and cubed into 1-inch pieces
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
1 teaspoon garlic powder (or 2 cloves fresh garlic, minced)

Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2: Wash, peel (optional), and cut the sweet potatoes into roughly 1-inch cubes. Try to make them uniform in size for even cooking.
Step 3: In a large bowl, combine the cubed sweet potatoes, olive oil, chopped fresh rosemary (or dried), garlic powder (or minced fresh garlic), sea salt, and black pepper. Toss well until all sweet potato pieces are evenly coated.
Step 4: Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Ensure they are not overcrowded to allow for proper roasting and crisping. Use two baking sheets if necessary.
Step 5: Roast for 25-30 minutes, flipping the sweet potatoes halfway through, until they are tender when pierced with a fork and have golden, slightly crispy edges.
Step 6: Remove from the oven and serve immediately as a delicious side dish. A sprinkle of fresh parsley is optional for garnish.
Notes
For extra crispy sweet potatoes, ensure your oven is fully preheated and the potatoes are spread in a single layer without overcrowding. Flipping them halfway through helps with even browning. You can also finish them under the broiler for 1-2 minutes, watching carefully to prevent burning.
