This is the classic, incredibly easy, and utterly addictive Rotel dip recipe, perfect for any party or gathering. Creamy Velveeta, savory ground beef, and zesty Rotel diced tomatoes with green chilies combine for a warm, cheesy, and slightly spicy appetizer that everyone loves.

1 lb ground beef (or ground sausage)
1 (16 oz) block Velveeta cheese, cut into 1-inch cubes
2 (10 oz) cans Rotel Diced Tomatoes with Green Chilies (undrained, mild or original)
1/2 teaspoon garlic powder (optional)
Pinch of cayenne pepper (optional, for extra heat)

Instructions

Step 1: In a large skillet or pot, brown the ground beef over medium heat. Break it up into small pieces as it cooks.
Step 2: Once the ground beef is thoroughly cooked and no pink remains, carefully drain off any excess grease.
Step 3: Return the drained ground beef to the skillet or pot. Reduce the heat to low.
Step 4: Add the Velveeta cheese, cut into 1-inch cubes, to the pot with the ground beef.
Step 5: Pour in the undrained cans of Rotel diced tomatoes with green chilies.
Step 6: Stir continuously, allowing the Velveeta cheese to melt completely and combine with the ground beef and Rotel. Keep the heat low to prevent scorching.
Step 7: Continue stirring until the mixture is fully melted, smooth, and bubbling gently. This usually takes about 5-7 minutes.
Step 8: Season with garlic powder and cayenne pepper (if using). Taste and adjust seasonings as needed.
Step 9: Serve immediately with tortilla chips, Fritos, or your favorite dippers.

Notes

To keep the dip warm for a party, transfer it to a slow cooker set to the ‘warm’ setting. If the dip thickens too much upon reheating, add a tablespoon or two of milk to achieve the desired consistency.
