Ingredients
1 lb ground beef or breakfast sausage
1 block (32 oz) Velveeta cheese, cubed
2 cans (10 oz each) Ro-Tel Diced Tomatoes and Green Chilies, undrained
1/2 tsp garlic powder
1/2 tsp onion powder
Tortilla chips for serving
Instructions
Step 1: In a large skillet or pot over medium-high heat, brown the ground beef or sausage until it is completely cooked through and no longer pink.
Step 2: Drain the excess grease from the skillet thoroughly to ensure the rotel dip recipe remains smooth and not oily.
Step 3: Reduce the heat to low and add the cubed Velveeta cheese to the skillet along with both cans of undrained Ro-Tel tomatoes.
Step 4: Sprinkle in the garlic powder and onion powder, then stir constantly until the cheese is completely melted and the mixture is uniform.
Step 5: Transfer the dip to a serving bowl or a small slow cooker set to the ‘warm’ setting. Serve immediately with your favorite chips.
Notes
For a thinner dip, add 1/4 cup of milk. For a spicier version, add chopped fresh jalapeños.
