Easy Classic Rotel Dip

A super simple yet incredibly delicious cheesy dip made with ground beef, Velveeta, and Rotel diced tomatoes. Perfect for parties, game days, and casual gatherings where a crowd-pleasing appetizer is a must!

Ingredients

1 lb (450g) lean ground beef
16 oz (450g) Velveeta cheese, cubed
10 oz (280g) can Rotel diced tomatoes with green chilies (undrained)
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
Pinch of black pepper (to taste)
Optional: hot sauce, for extra spice

Instructions

Step 1: In a large skillet, brown the ground beef over medium-high heat, breaking it apart with a spoon until fully cooked and no pink remains.
Step 2: Carefully drain off any excess grease from the skillet. This is crucial for a non-oily dip.
Step 3: Reduce the heat to low. Add the cubed Velveeta cheese to the skillet with the drained ground beef.
Step 4: Pour in the undrained can of Rotel diced tomatoes with green chilies.
Step 5: Stir continuously, allowing the Velveeta to melt slowly and combine with the ground beef and Rotel. Continue stirring until the mixture is completely smooth and creamy, about 5-7 minutes.
Step 6: Stir in the chili powder, garlic powder, onion powder, and black pepper. Taste the Rotel dip and adjust seasonings as desired. Add a dash of hot sauce if you prefer a spicier dip.
Step 7: Serve the Rotel dip immediately with tortilla chips, Fritos, or your favorite dippers. For parties, transfer the dip to a slow cooker set to ‘warm’ to keep it hot and dippable throughout your event.

Notes

For best results, do not substitute Velveeta with natural cheese as it may not melt as smoothly. If you prefer a thicker dip, you can add a tablespoon of cream cheese along with the Velveeta. Keep warm in a slow cooker on the ‘warm’ setting for parties. Adjust the spice level by using mild, original, or hot Rotel, or by adding a dash of hot sauce.
