5 cups (about 1.5 lbs) fresh rhubarb, trimmed and cut into 1-inch pieces
1/2 cup granulated sugar (or to taste)
1/4 cup water
1 teaspoon lemon zest (from 1/2 lemon)
1 tablespoon fresh lemon juice
1/2 teaspoon vanilla extract (optional)

Instructions
Step 1: Prepare the rhubarb. Wash the rhubarb stalks thoroughly and trim off the leafy ends and any tough root sections. Cut the rhubarb into 1-inch pieces.
Step 2: Combine ingredients. In a medium saucepan, combine the chopped rhubarb, granulated sugar, water, lemon zest, lemon juice, and a pinch of salt. This rubarbe recipe is all about simple assembly.
Step 3: Simmer the compote. Place the saucepan over medium heat. Bring the mixture to a gentle simmer, then reduce the heat to low. Notes
For a thicker compote, you can cook it a little longer until more liquid evaporates. For a smoother texture, you can mash some of the rhubarb chunks with a fork or use an immersion blender for a few pulses.
