Ingredients
8 cups mixed greens (romaine, spinach, arugula, butter lettuce)
1 cup cherry tomatoes, halved
1 large cucumber, diced
1 red bell pepper, thinly sliced
1/2 red onion, thinly sliced
1/2 cup shredded carrots
1 cup cooked protein (e.g., grilled chicken breast, chickpeas, hard-boiled eggs), diced or shredded
1/4 cup toasted nuts or seeds (almonds, walnuts, pumpkin seeds) for garnish (optional)
For the Lemon Vinaigrette:
1/4 cup extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
1/2 teaspoon dried oregano (optional)
Salt and freshly ground black pepper to taste
Instructions
Step 1: Prepare the greens. In a large salad bowl, combine the mixed greens. Ensure they are thoroughly washed and completely dry. Use a salad spinner if you have one to remove excess water.
Step 2: Chop the vegetables. Add the halved cherry tomatoes, diced cucumber, thinly sliced red bell pepper, thinly sliced red onion, and shredded carrots to the bowl with the greens.
Step 3: Add the protein. Incorporate your chosen cooked protein (grilled chicken, chickpeas, etc.) into the salad bowl. This makes the salad a complete and filling meal.
Step 4: Prepare the lemon vinaigrette. In a small bowl or jar, whisk together the extra virgin olive oil, fresh lemon juice, Dijon mustard, minced garlic, and dried oregano (if using). Season with salt and freshly ground black pepper to taste. Whisk until emulsified.
Step 5: Dress the salad. Just before serving, pour the vinaigrette over the salad ingredients. Toss gently to ensure all components are evenly coated with the dressing. Avoid over-dressing; you can always add more.
Step 6: Garnish and serve. If desired, sprinkle the toasted nuts or seeds over the top for added crunch and flavor. Serve immediately and enjoy your fresh, vibrant, and versatile everyday salad!
Notes
Feel free to customize this salad with your favorite vegetables, proteins, and even a sprinkle of cheese. For best results, dress the salad just before serving to prevent the greens from becoming soggy. Leftover dressing can be stored in the refrigerator for up to a week.
