1 lb fresh salmon fillets
1/2 cup mayonnaise or plain Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1/2 teaspoon lemon zest
1/4 cup finely diced red onion
1/2 cup diced celery
2 tablespoons fresh dill, chopped
1 tablespoon fresh parsley, chopped
Salt and black pepper to taste
1 tablespoon olive oil (for cooking salmon)
Instructions
Step 1: Season the salmon fillets generously with salt and pepper. Heat olive oil in a skillet over medium-high heat.
Step 2: Sear the salmon for 4-5 minutes per side until cooked through and opaque. Remove from heat and let cool completely.
Step 3: In a medium bowl, whisk together mayonnaise, Dijon mustard, lemon juice, lemon zest, dill, and parsley.
Step 4: Once the salmon is cool, use a fork to gently flake it into bite-sized pieces into a large bowl.
Step 5: Add the diced red onion and celery to the salmon.
Step 6: Pour the dressing over the salmon mixture and gently fold with a spatula until evenly coated. Chill for 30 minutes before serving for the best flavor.
Notes
For a lower-calorie version, replace half of the mayonnaise with Greek yogurt. Always ensure your salmon is fully cooled before mixing to maintain the creamy texture.
