Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
24 oz cream cheese, room temperature
1 cup granulated sugar
1 cup sour cream
1 tbsp vanilla extract
3 large eggs
2 large Granny Smith apples, peeled and diced
1/4 cup brown sugar
1 tsp ground cinnamon
1 cup heavy cream
1/2 cup salted butter
1 cup granulated sugar (for caramel)
1 tsp sea salt
Instructions
Step 1: Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
Step 2: Mix graham cracker crumbs and melted butter, then press firmly into the bottom of the pan and bake for 10 minutes.
Step 3: In a large bowl, beat the cream cheese and sugar until smooth, then add sour cream and vanilla.
Step 4: Add eggs one at a time, mixing on low speed until just combined. Pour the batter over the crust.
Step 5: Bake for 55-65 minutes in a water bath until the edges are set but the center still jiggles slightly.
Step 6: While the cheesecake cools, sauté diced apples with brown sugar and cinnamon until tender.
Step 7: In a small saucepan, melt sugar for the caramel until amber, then carefully stir in butter and heavy cream. Add sea salt.
Step 8: Top the cooled cheesecake with the apples and drizzle generously with the salted caramel sauce.
Step 9: Chill in the refrigerator for at least 6 hours before serving.
