Ingredients
1.5 cups all-purpose flour
1/2 cup cold unsalted butter, cubed
1/4 cup granulated sugar
1/4 tsp salt
1 egg yolk
2 tbsp ice water
4 large Granny Smith apples, peeled and thinly sliced
1/4 cup brown sugar
1 tsp ground cinnamon
1/2 cup granulated sugar (for caramel)
4 tbsp butter (for caramel)
1/3 cup heavy cream
1/2 tsp flaky sea salt
Instructions
Step 1: In a food processor, pulse the flour, sugar, and salt. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
Step 2: Add the egg yolk and ice water, pulsing until the dough just begins to come together. Wrap in plastic and chill for at least 30 minutes.
Step 3: Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit it into a 9-inch tart pan with a removable bottom.
Step 4: Toss the sliced apples with brown sugar and cinnamon. Arrange them in tight concentric circles on top of the pastry base.
Step 5: Bake for 40-45 minutes, or until the pastry is golden brown and the apples are tender.
Step 6: While the tart bakes, make the caramel. Melt 1/2 cup sugar in a saucepan over medium heat until it turns amber. Stir in the butter, then slowly pour in the heavy cream while whisking constantly. Stir in the flaky sea salt.
Step 7: Once the tart is out of the oven, drizzle the warm salted caramel over the apples. Let it cool slightly before serving.
Notes
Always use cold butter for the crust to ensure maximum flakiness. If the caramel hardens too much, microwave it for 10 seconds before drizzling.
