Ingredients
2 cups all-purpose flour
1/2 teaspoon salt
4 tablespoons ghee or vegetable oil (for dough)
1/2 cup cold water (approx.)
3 large potatoes, boiled and coarsely mashed
1/2 cup green peas (fresh or frozen)
2 tablespoons vegetable oil (for filling)
1 teaspoon cumin seeds
1 inch ginger, grated or finely chopped
2 green chilies, finely chopped (adjust to taste)
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
1 teaspoon salt (for filling, adjust to taste)
Oil for deep frying
Instructions
Step 1: In a large bowl, combine all-purpose flour and 1/2 tsp salt. Add 4 tbsp ghee or oil and rub it into the flour with your fingertips until the mixture resembles coarse breadcrumbs. This ensures a flaky crust for your Samosa Recipe.
Step 2: Gradually add cold water, a tablespoon at a time, and knead until a firm, smooth dough forms. The dough should be stiff. Cover with a damp cloth and let it rest for at least 30 minutes.
Step 3: Boil potatoes until just tender, then peel and mash them coarsely. Set aside.
Step 4: Heat 2 tbsp oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped ginger and green chilies, and sauté for 1 minute until fragrant.
Step 5: Add the mashed potatoes, green peas, turmeric powder, coriander powder, garam masala, and 1 tsp salt. Mix well and cook for 5-7 minutes, stirring occasionally, until the mixture is relatively dry. Let the filling cool completely.
Step 6: Divide the rested dough into 6 equal-sized balls. Roll each ball into an oval shape, about 6-7 inches long and 4-5 inches wide.
Step 7: Cut the oval dough in half horizontally, creating two semi-circles.
Step 8: Take one semi-circle. Dampen the straight edge with a little water. Bring the two corners of the straight edge together, overlapping them slightly to form a cone. Press firmly to seal the seam.
Step 9: Hold the cone and fill it with about 1-2 tablespoons of the potato-pea mixture. Do not overfill.
Step 10: Dampen the open edge of the cone with water. Carefully pleat one side of the open edge and press it firmly against the other side, sealing the top to form a triangular shape. Ensure all seams are tightly sealed. Repeat for all samosas.
Step 11: Heat oil for deep frying in a deep pan or kadai over low-medium heat (around 300-325°F or 150-160°C). The temperature is crucial for a perfectly cooked Samosa Recipe.
Step 12: Gently slide a few samosas into the hot oil. Fry them slowly, turning occasionally, until they are golden brown and crispy on all sides (10-15 minutes per batch). Remove with a slotted spoon and drain on paper towels. Serve your delicious Samosa Recipe hot!
Notes
For best results, ensure the potato filling is completely dry before assembly to prevent sogginess. Fry samosas on low-medium heat for even cooking and optimal crispiness. Serve immediately with your favorite chutneys.
