Ingredients
1.5 lbs small red or Yukon Gold potatoes, scrubbed and cut into 1-inch pieces
1 lb smoked sausage (kielbasa or chicken sausage), sliced into ½-inch rounds
1 large bell pepper (any color), cored, seeded, and cut into 1-inch pieces
1 medium yellow onion, cut into 1-inch pieces
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon smoked paprika
½ teaspoon salt, or to taste
¼ teaspoon black pepper, or to taste
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
Step 2: In a large bowl, combine the cut potatoes, sliced sausage, bell pepper, and onion.
Step 3: Drizzle the mixture with olive oil. Add the minced garlic, dried oregano, smoked paprika, salt, and black pepper. Toss everything together until all ingredients are evenly coated.
Step 4: Spread the seasoned sausage and potato mixture in a single layer on the prepared baking sheet. Ensure there is enough space between the ingredients for even roasting; use a second sheet pan if necessary to avoid overcrowding.
Step 5: Roast for 20 minutes. Carefully remove the pan from the oven, stir or flip the ingredients, and return to the oven.
Step 6: Continue roasting for another 15-20 minutes, or until the potatoes are tender when pierced with a fork, golden brown, and the sausage is slightly crispy.
Step 7: Remove from the oven, garnish with fresh chopped parsley, and serve immediately. Enjoy your delicious one-pan sausage and potato bake!
Notes
For best results, ensure potatoes and vegetables are cut into similar sizes for even cooking. Don’t overcrowd the baking sheet; use two if needed. Feel free to experiment with different vegetables like broccoli or sweet potatoes.
