Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup granulated sugar
1 large egg
1 cup milk
1/4 cup vegetable oil (or melted unsalted butter)
1 cup shredded sharp cheddar cheese
1/2 cup fresh spinach, finely chopped
1/2 cup cooked and crumbled breakfast sausage or diced ham
1/4 cup finely chopped red bell pepper
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
Instructions
Step 1: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper or silicone liners, or grease lightly.
Step 2: In a large bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined.
Step 3: In a separate medium bowl, lightly beat the egg. Then whisk in the milk and vegetable oil (or melted butter).
Step 4: Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. Do not overmix; a few lumps are fine.
Step 5: Gently fold in the shredded cheddar cheese, finely chopped spinach, cooked sausage or ham, finely chopped red bell pepper, dried thyme, and black pepper.
Step 6: Divide the batter evenly among the 12 muffin cups. Sprinkle a little extra cheese on top of each muffin, if desired.
Step 7: Bake for 23-27 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Step 8: Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Feel free to customize your muffins with your favorite vegetables, cheeses, and proteins. These muffins are excellent for meal prep and can be stored in the fridge for up to 5 days or frozen for up to 3 months. Reheat gently in the microwave or oven.
