Ingredients
4 sticks (1 lb) Unsalted Butter
1 large Onion, finely diced
1/4 cup Garlic, minced (about 10–12 cloves)
2 tbsp Old Bay Seasoning
1 tbsp Smoked Paprika
1 tbsp Lemon Pepper Seasoning
1 tsp Cayenne Pepper (adjust for heat)
1 tbsp Brown Sugar
2 tbsp Fresh Lemon Juice
1 tbsp Ginger Paste (optional)
1/4 cup Seafood Cooking Liquid (or water)
Instructions
Step 1: In a large saucepan, melt the 4 sticks of butter over medium-low heat. Be careful not to let the butter brown or burn.
Step 2: Add the finely diced onions and sauté for about 3-5 minutes until they become translucent and soft.
Step 3: Stir in the minced garlic and ginger paste. Sauté for another 2 minutes until very fragrant, but ensure the garlic does not turn brown.
Step 4: Add the Old Bay seasoning, smoked paprika, lemon pepper, cayenne pepper, and brown sugar. Stir well to combine the spices with the butter.
Step 5: Pour in the fresh lemon juice and the seafood cooking liquid. Whisk the sauce gently to help emulsify the fats and liquids.
Step 6: Reduce the heat to the lowest setting and let the sauce simmer for 10-12 minutes, stirring occasionally to prevent the spices from sticking to the bottom.
Step 7: Remove from heat. Toss immediately with your boiled seafood or serve in individual dipping bowls while hot.
Notes
For a milder sauce, reduce the cayenne pepper to a pinch. Always use fresh lemon for the best acidity.
