Ultimate Southern-Style Seafood Boil

An incredibly flavorful and interactive Southern-style Seafood Boil, packed with shrimp, crab, sausage, potatoes, and corn, all simmered in a rich, spicy broth. Perfect for gatherings and special occasions!

  • Total Time: 1 hour 15 minutes
  • Yield: 8-10 servings 1x

Ingredients

Scale

8 quarts water
1 (12-ounce) can beer (optional, but recommended)
1 cup Old Bay Seasoning
1/2 cup Louisiana hot sauce (or to taste)
1/4 cup cayenne pepper (adjust to desired spice level)
1 tablespoon black pepper
1 whole head garlic, halved horizontally
2 large lemons, halved
2 medium yellow onions, quartered
3 pounds small red or new potatoes, halved
1.5 pounds smoked sausage (andouille or kielbasa), cut into 2-inch pieces
6 ears fresh corn on the cob, cut into 3-inch segments
3 pounds large shrimp, head on or off, shells on, deveined (if preferred)
3 pounds crab legs (Snow, Dungeness, or Blue Crab), pre-cooked or raw
Melted butter, for serving
Extra lemon wedges, for serving
Fresh parsley, chopped (optional, for garnish)

Instructions

Step 1: Gather all your ingredients. Prep shrimp by peeling and deveining if desired (leaving shells on for flavor is recommended). Wash crab legs. Cut sausage into 2-inch pieces. Halve small potatoes. Cut corn into 3-inch segments.
Step 2: In a very large stockpot (at least 16-quart or larger), combine 8 quarts of water, the can of beer (if using), 1 cup of Old Bay Seasoning, 1/2 cup of Louisiana hot sauce, 1/4 cup of cayenne pepper, 1 tablespoon of black pepper, the halved garlic head, halved lemons, and quartered onions. Bring this mixture to a rolling boil over high heat.
Step 3: Once boiling, reduce the heat to medium-high, cover the pot, and let it simmer for at least 15-20 minutes to allow the flavors to meld beautifully and create a rich broth.
Step 4: Increase the heat back to high and bring the broth to a vigorous boil. Add the halved potatoes and smoked sausage pieces to the boiling liquid. Cook for 10-12 minutes, or until the potatoes are just tender when pierced with a fork.
Step 5: Add the corn on the cob segments to the pot. Continue to boil for another 5 minutes, allowing the corn to cook through and absorb the delicious flavors.
Step 6: Finally, add the crab legs and shrimp to the pot. Cook for 3-5 minutes, or until the shrimp are pink and opaque and the crab is heated through. Be careful not to overcook the seafood to ensure it remains tender.
Step 7: Carefully drain the entire contents of the pot using a large colander or by lifting with tongs. You can reserve some of the seasoned broth for dipping if desired.
Step 8: For the ultimate communal dining experience, spread several layers of newspaper or parchment paper over a large table. Pour the entire seafood boil directly onto the table.
Step 9: Garnish the feast with fresh lemon wedges and a sprinkle of chopped fresh parsley (optional). Serve immediately with small bowls of melted butter and extra hot sauce on the side. Provide plenty of paper towels and crab cracking tools. Enjoy your Ultimate Southern-Style Seafood Boil!

Notes

For best results, use fresh, high-quality seafood. Adjust the spice level to your preference by modifying the amount of cayenne pepper and hot sauce. Don’t overcook the seafood!
