Ingredients
1.5 cups semolina flour (medium grind)
1 cup all-purpose flour
1.5 tsp baking powder
0.5 tsp baking soda
0.5 tsp salt
1 cup granulated sugar
1 cup full-fat Greek yogurt
3 large eggs, room temperature
0.5 cup unsalted butter, melted and cooled
2 tbsp blood orange zest
0.25 cup fresh blood orange juice
1 tsp vanilla extract
1.5 cups powdered sugar (for glaze)
2–3 tbsp blood orange juice (for glaze)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
Step 2: In a medium bowl, whisk together the semolina flour, all-purpose flour, baking powder, baking soda, and salt.
Step 3: In a large bowl, beat the eggs and sugar together until pale and fluffy. Stir in the Greek yogurt, melted butter, blood orange zest, juice, and vanilla extract.
Step 4: Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix the batter for your semolina cake with yogurt and blood orange glaze.
Step 5: Pour the batter into the prepared pan and smooth the top. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Step 6: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Step 7: To make the glaze, whisk together powdered sugar and 2-3 tablespoons of blood orange juice until smooth. Drizzle over the cooled cake and let it set before serving.
