1 pre-baked 9-inch pie crust, cooled
6 cups fresh strawberries, hulled (about 2 lbs)
1 cup granulated sugar
1/2 cup cold water
2 tablespoons fresh lemon juice
1 (3 ounce) package strawberry flavored gelatin mix (like Jell-O)
Instructions
Step 1: Begin by blind baking your pie crust. Whether store-bought or homemade, prick the bottom and sides with a fork. Line it with parchment paper and fill with pie weights or dried beans. Bake according to package or recipe directions, usually around 15-20 minutes at 375°F (190°C), until golden brown. Allow it to cool completely on a wire rack.
Step 2: While the crust cools, wash and hull your fresh strawberries. Slice about 1 cup of the smallest or most imperfect berries. The remaining whole strawberries will be used for layering.
Step 3: In a medium saucepan, combine the 1 cup of sliced strawberries, granulated sugar, 1/2 cup cold water, and fresh lemon juice. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for about 5-7 minutes, stirring occasionally, until the strawberries have softened and released their juices. Mash them gently with a fork or potato masher to create a pulpy consistency.
Step 4: Remove the saucepan from the heat. Whisk in the strawberry gelatin powder until it is completely dissolved. Make sure there are no lumps. Allow this mixture to cool slightly at room temperature, about 10-15 minutes. It should still be pourable but not piping hot.
Step 5: Arrange the remaining whole, hulled strawberries in the cooled pie crust. Place them snugly, pointed side up, filling the crust as much as possible to create a visually appealing arrangement.
Step 6: Gently pour the slightly cooled gelatin mixture over the arranged strawberries, making sure to coat all the berries and fill in all the gaps. Use a spoon to guide the glaze evenly over the top if needed.
Step 7: Carefully transfer the pie to the refrigerator. Chill for at least 4-6 hours, or preferably overnight, until the glaze is completely set. Do not rush this step, as proper chilling is essential for the pie to hold its shape when sliced.
Step 8: Once set, slice and serve your magnificent strawberry pie! It’s fantastic on its own, or with a dollop of fresh whipped cream or a scoop of vanilla ice cream.

For the best results, ensure your strawberries are fresh and ripe, and allow ample chilling time for the glaze to set completely. This pie is best enjoyed within 2-3 days and should be stored in the refrigerator.
