Ingredients
1 lb large shrimp, peeled and deveined
3 bell peppers (red, yellow, orange), sliced into strips
1 large yellow onion, sliced into strips
2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
1 tablespoon lime juice
Fresh cilantro for garnish
8–10 small flour or corn tortillas
Instructions
Step 1: In a small bowl, combine chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.
Step 2: Toss the shrimp in a medium bowl with 1 tablespoon of olive oil and half of the spice mixture until well coated.
Step 3: Heat the remaining tablespoon of oil in a large skillet over medium-high heat. Add the bell peppers and onions along with the remaining spices.
Step 4: Sauté the vegetables for 5-6 minutes until tender and slightly charred. Remove vegetables from the skillet and set aside.
Step 5: Add the shrimp to the same skillet in a single layer. Cook for 2-3 minutes per side until pink and opaque.
Step 6: Return the vegetables to the skillet, drizzle with lime juice, and toss everything together. Garnish with cilantro and serve immediately with warm tortillas.
Notes
Ensure the shrimp are very dry before seasoning to get a better sear. For extra flavor, char the tortillas directly over a gas flame for a few seconds.
