4–6 cinnamon sticks
2 tablespoons whole cloves
1 cup fresh cranberries (optional, for color and subtle tartness)
1–2 sprigs fresh rosemary or bay leaves (optional)

Instructions

Step 1: Gather all your ingredients. If using fresh oranges, slice them into 1/4 to 1/2 inch thick rounds. If using orange peels, ensure they are clean and free of any stickers.
Step 2: Choose a medium to large saucepan, stockpot, or a slow cooker. Place all the sliced oranges (or peels), cinnamon sticks, whole cloves, and optional cranberries and rosemary/bay leaves into the pot.
Step 3: Fill the pot with enough water to completely cover all the ingredients. Leave about an inch or two of space from the rim to prevent boiling over.
Step 4: If using a stovetop, place the pot over medium-high heat and bring the water to a gentle boil. Once boiling, immediately reduce the heat to the lowest setting to maintain a very gentle simmer. If using a slow cooker, set it to the ‘low’ setting.
Step 5: Allow the simmer pot to gently release its wonderful fragrance into your home. Periodically check the water level, typically every 30-60 minutes, and add more hot water as needed to keep the ingredients submerged. This ensures the aroma continues and prevents the pot from drying out.
Step 6: The simmer pot can be left simmering for 4-6 hours, or even longer if using a slow cooker and constantly replenishing the water. When the scent begins to fade, or after extended use, safely discard the contents and wash your pot. You can start a fresh batch whenever you desire a new burst of fragrance.
