1/4 cup soy sauce (low sodium preferred)
1/4 cup fresh lime juice (from about 2–3 limes)
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon chili powder (optional, for a kick)
1/4 teaspoon black pepper
Fresh cilantro and/or parsley, chopped (for garnish)
Instructions
Step 1: Begin by preparing your skirt steak. If it’s a very long piece, you might want to cut it into 2-3 shorter, more manageable sections, about 8-10 inches each. This makes it easier to handle on the grill or in a pan. Pat the steak thoroughly dry with paper towels; a dry surface is crucial for achieving a good sear.
Step 2: In a shallow dish or a large zip-top bag, combine all the marinade ingredients: soy sauce, fresh lime juice, olive oil, minced garlic, cumin, chili powder, and a generous pinch of black pepper. Whisk everything together until well combined.
Step 3: Add the skirt steak to the marinade, ensuring it’s fully coated. Massage the marinade into the meat slightly. Cover the dish or seal the bag, removing as much air as possible. Refrigerate for at least 2 hours, but preferably 4-6 hours. You can even marinate it overnight for maximum flavor penetration.
Step 4: About 30 minutes before cooking, remove the steak from the refrigerator to allow it to come closer to room temperature. This promotes more even cooking. While it rests, preheat your grill to high heat (or a heavy-bottomed cast-iron skillet over medium-high heat) until it’s screaming hot.
Step 5: Remove the steak from the marinade, allowing any excess to drip off. Discard the remaining marinade. Lightly oil your grill grates or skillet. Place the skirt steak directly on the hot surface.
Step 6: Grill for 3-5 minutes per side for medium-rare (internal temperature of 130-135°F), or 5-7 minutes per side for medium (135-140°F). Skirt steak is thin, so it cooks quickly. Don’t overcook it, as it can become tough. Use a meat thermometer for accuracy.
Step 7: Once cooked to your desired doneness, transfer the skirt steak to a cutting board. This step is CRUCIAL: tent it loosely with foil and let it rest for at least 5-10 minutes. This allows the juices to redistribute throughout the meat, ensuring a tender, juicy result. Resting is non-negotiable for tender skirt steak recipes.
Step 8: After resting, slice the skirt steak against the grain into thin strips. The grain runs the length of the steak; you want to cut perpendicular to these lines. This shortens the muscle fibers, making the steak incredibly tender and easy to chew. Garnish with fresh chopped cilantro and/or parsley before serving.
Notes
For best results, always slice skirt steak against the grain. This is the single most important tip for tender skirt steak! Adjust chili powder to your spice preference. If you don’t have a grill, a cast iron skillet works wonders.
