Ingredients
2 lbs boneless skinless chicken breasts or thighs
1.5 cups BBQ sauce of choice
1/4 cup apple cider vinegar
1 tablespoon brown sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
Instructions
Step 1: Place the chicken breasts or thighs in an even layer at the bottom of the slow cooker.
Step 2: In a small bowl, whisk together the BBQ sauce, apple cider vinegar, brown sugar, garlic powder, onion powder, and smoked paprika.
Step 3: Pour the sauce mixture over the chicken, making sure each piece is well coated.
Step 4: Cover and cook on ‘Low’ for 6 to 7 hours, or on ‘High’ for 3 to 4 hours until the chicken is tender and easy to shred.
Step 5: Remove the chicken from the pot and shred it using two forks. Place the shredded chicken back into the sauce for 15 minutes to soak up the juices before serving.
Notes
For best results, use a mix of chicken breasts and thighs. Store leftovers in an airtight container for up to 4 days.
