Ingredients
2 lbs lean ground beef (90/10)
1 large yellow onion, diced
4 cloves garlic, minced
2 cans (15 oz) dark red kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
2 cans (14.5 oz) fire-roasted diced tomatoes
1 can (15 oz) tomato sauce
1 cup beef broth
3 tbsp chili powder
1 tbsp ground cumin
1 tsp smoked paprika
1 tsp unsweetened cocoa powder
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper (optional for heat)
Instructions
Step 1: In a large skillet over medium-high heat, brown the ground beef until no pink remains. Drain the excess fat thoroughly.
Step 2: Add the diced onion and minced garlic to the skillet with the beef and cook for 3-4 minutes until the onion is translucent.
Step 3: Transfer the meat mixture into the slow cooker insert.
Step 4: Add the kidney beans, black beans, diced tomatoes, tomato sauce, and beef broth to the slow cooker.
Step 5: Stir in the chili powder, cumin, smoked paprika, cocoa powder, salt, black pepper, and cayenne pepper until well combined.
Step 6: Cover and cook on LOW for 7-8 hours or on HIGH for 3-4 hours.
Step 7: Before serving, stir the chili and taste for seasoning, adding more salt if necessary. Serve hot with your favorite toppings.
Notes
For the best flavor, allow the chili to sit for 10 minutes after turning off the heat before serving. This allows the sauce to thicken slightly.
