Spicy Garlic Smacked Cucumber Salad

A refreshing and vibrant Asian-inspired Smacked Cucumber Salad with a zesty, garlicky, and slightly spicy dressing. This quick and easy side dish is perfect for summer and complements any meal beautifully.

Ingredients

2 large English cucumbers (or 4–5 Persian cucumbers)
1/2 tsp salt, plus more to taste
3 cloves garlic, minced
1–2 red chilies (e.g., bird’s eye or serrano), thinly sliced (or 1 tsp chili flakes), adjust to taste
2 tbsp light soy sauce
2 tbsp Chinese black vinegar (Chinkiang vinegar), or rice vinegar
1 tsp sugar
1 tbsp sesame oil
1–2 tbsp chili oil (optional, for extra heat and flavor)
1 tbsp toasted sesame seeds, for garnish
2 tbsp fresh cilantro, chopped, for garnish (optional)

Instructions

Step 1: Prepare Your Cucumbers. Wash and thoroughly dry your cucumbers. Place a cucumber on a cutting board. Using the flat side of a heavy chef’s knife or a rolling pin, firmly ‘smack’ the cucumber until it cracks and begins to split open along its length.
Step 2: Cut and Salt the Cucumbers. Roughly chop the smacked cucumbers into irregular 1 to 1.5-inch pieces. Transfer them to a colander, sprinkle with ½ teaspoon of salt, and toss to coat. Let them sit for 15-20 minutes to draw out excess water.
Step 3: Prepare the Dressing. While the cucumbers are draining, combine the minced garlic, sliced red chilies (or chili flakes), soy sauce, Chinese black vinegar, sugar, sesame oil, and optional chili oil in a small bowl. Whisk until the sugar is dissolved.
Step 4: Drain and Combine. After 15-20 minutes, gently squeeze any remaining excess water from the cucumbers. Pat them dry with a paper towel if necessary. Transfer the well-drained cucumbers to a mixing bowl.
Step 5: Dress and Chill. Pour the prepared dressing over the cucumbers. Toss gently to ensure every piece is thoroughly coated. Cover the bowl and refrigerate for at least 15-20 minutes to allow the flavors to meld.
Step 6: Garnish and Serve. Just before serving, give the Smacked Cucumber Salad another quick toss. Garnish with toasted sesame seeds and fresh chopped cilantro if desired. Serve immediately and enjoy!

Notes

For best results, allow the salad to chill for at least 15-20 minutes, or even an hour, to let the flavors fully develop. If you prefer less spice, deseed the chilies or use chili flakes instead of fresh chilies. This salad is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
