Smashed Cannellini Bean Crostini

1 French baguette or ciabatta loaf
3 tablespoons olive oil (for crostini)

1 can (400g) cannellini beans, drained and rinsed
2 tablespoons olive oil (for bean spread)
1 clove garlic, minced
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped (or basil/thyme)
1 teaspoon Dijon mustard (optional)
Salt and black pepper, to taste (for bean spread)
Extra virgin olive oil, for drizzling (optional garnish)
Fresh herbs (for garnish, optional)
Red pepper flakes (for garnish, optional)

Instructions

Step 1: Preheat your oven to 200°C (400°F). Slice the baguette or ciabatta into 1/2-inch thick slices.
Step 2: Arrange the slices on a baking sheet. Brush both sides lightly with 3 tablespoons of olive oil. Sprinkle with salt and pepper.
Step 3: Bake in the preheated oven for about 8-10 minutes, or until golden and crispy. Flip the slices halfway through for even toasting. Remove from oven and let cool slightly.
Step 4: In a medium bowl, combine the drained cannellini beans, 2 tablespoons olive oil, minced garlic, fresh lemon juice, chopped parsley, and Dijon mustard (if using).
Step 5: Use a fork or potato masher to gently smash the beans until you reach your desired consistency. You can leave it a bit chunky for texture or make it smoother. Season the bean spread with salt and pepper to taste, adjusting as needed.
Step 6: Once the crostini are cooled, top each slice with a generous spoonful of the smashed cannellini bean mixture.
Step 7: Drizzle with a little extra virgin olive oil and sprinkle with additional fresh herbs and red pepper flakes, if desired.
Step 8: Serve immediately while the crostini are still warm and crisp. Enjoy!

Notes

For a smoother spread, you can briefly pulse the bean mixture in a food processor, but be careful not to make it too pasty. Customize with your favorite herbs like basil or thyme, or add a pinch of smoked paprika for extra depth.
