Ingredients
14 oz smoked sausage (kielbasa or andouille), sliced into rounds
1.5 lbs Yukon Gold potatoes, diced into 1/2-inch cubes
1 large yellow onion, diced
1 red bell pepper, chopped
1 green bell pepper, chopped
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Heat 1 tablespoon of olive oil in a large cast-iron skillet over medium-high heat.
Step 2: Add the sliced smoked sausage to the skillet and cook for 3-5 minutes until browned on both sides. Remove the sausage and set aside on a plate.
Step 3: Add the remaining tablespoon of olive oil to the same skillet. Add the diced potatoes in a single layer. Season with salt and pepper.
Step 4: Cook the potatoes undisturbed for 5-7 minutes to develop a crust, then stir and cook for another 5 minutes until nearly tender.
Step 5: Add the onions and bell peppers to the skillet with the potatoes. Sprinkle with smoked paprika and garlic powder. Sauté for 5-6 minutes until vegetables are softened.
Step 6: Stir the browned sausage back into the skillet. Cook for an additional 2-3 minutes until everything is heated through and flavors are melded. Garnish with fresh parsley and serve immediately.
Notes
For extra crispy potatoes, ensure they are dried thoroughly with a paper towel before adding them to the hot skillet.
