Soft and Chewy Easter Cookies

1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips or Easter-themed candies (like M&Ms or jellybeans)
Optional: colorful sprinkles for decoration

Instructions

Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
Step 2: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
Step 3: Beat in the eggs, one at a time, followed by the vanilla extract, mixing until well combined.
Step 4: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix!
Step 5: Gently fold in the chocolate chips or Easter-themed candies, ensuring they are evenly distributed throughout the dough.
Step 6: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft. They will continue to firm up as they cool.
Step 7: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. If desired, sprinkle colorful sprinkles on top while they are still warm for an extra festive touch.

Notes

For an even softer cookie, slightly underbake them and let them finish cooking on the baking sheet for 5 minutes before transferring to a wire rack. Don’t overmix the dough to keep them tender.
