Southern-Style Honey Butter Cornbread Poppers

These delightful bite-sized cornbread poppers are kissed with honey and butter, offering a perfect blend of sweet and savory in every tender morsel.

Ingredients

1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
2 large eggs
1/2 cup (1 stick) unsalted butter, melted and divided (1/4 cup for batter, 1/4 cup for glaze)
1/4 cup honey, divided (2 tablespoons for batter, 2 tablespoons for glaze)
Optional: 1/2 cup corn kernels, 1/4 cup diced jalapeños, or 1/2 cup shredded cheddar cheese

Instructions

Step 1: Preheat your oven to 375°F (190°C). Generously grease a mini muffin tin.
Step 2: In a large bowl, whisk together the yellow cornmeal, all-purpose flour, granulated sugar, baking powder, and salt.
Step 3: In a separate medium bowl, whisk together the milk, 1/4 cup of the melted unsalted butter, eggs, and 2 tablespoons of the honey until well combined.
Step 4: Pour the wet ingredients into the dry ingredients. Stir just until moistened. A few lumps are okay; do not overmix. If desired, gently fold in corn kernels, jalapeños, or cheese.
Step 5: Spoon the batter evenly into the prepared mini muffin tin wells, filling each about two-thirds full.
Step 6: Bake for 12-15 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
Step 7: While the poppers are baking, melt the remaining 1/4 cup unsalted butter in a small saucepan or microwave-safe bowl. Stir in the remaining 2 tablespoons of honey until well combined.
Step 8: As soon as the cornbread poppers come out of the oven, immediately brush the warm honey butter glaze generously over the tops.
Step 9: Allow them to cool slightly in the tin before carefully removing. Serve warm and enjoy!

Notes

For extra crispiness, preheat your muffin tin in the oven for a few minutes before greasing and adding batter. This helps create a better crust.
