Ingredients
1.5 cups all-purpose flour
1.5 tsp baking powder
0.5 tsp salt
1.5 tsp ground cinnamon
0.5 tsp ground ginger
0.25 tsp ground nutmeg
0.75 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 cups apples, peeled and diced (Granny Smith or Honeycrisp)
1 cup fresh or frozen cranberries
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
Step 2: In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, ginger, and nutmeg until well combined.
Step 3: In a large bowl or stand mixer, cream the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).
Step 4: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. The batter will be thick.
Step 6: Gently fold in the diced apples and the cranberries using a spatula until they are evenly distributed throughout the spiced apple cranberry cake batter.
Step 7: Spread the batter into the prepared pan, smoothing the top with a spatula. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Allow the spiced apple cranberry cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a crunchier top, sprinkle a tablespoon of turbinado sugar over the batter before baking.
