Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
1 tablespoon baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/2 teaspoon salt
1 cup buttermilk
1/2 cup unsalted butter, melted and cooled
1 large egg, room temperature
1 teaspoon vanilla extract
1 1/2 cups tart apples, peeled and finely diced
1 cup fresh or frozen cranberries
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.
Step 2: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, ginger, and salt until well combined.
Step 3: In a separate medium bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract until the mixture is smooth.
Step 4: Toss the diced apples and cranberries with a small amount of the dry flour mixture to prevent them from sinking.
Step 5: Gently fold the wet ingredients into the dry ingredients using a spatula. Mix only until the flour is just incorporated; do not overmix.
Step 6: Fold in the prepared apples and cranberries carefully into the batter.
Step 7: Divide the batter evenly among the 12 muffin cups, filling each nearly to the top.
Step 8: Bake for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For an extra crunch, sprinkle the tops with turbinado sugar before baking. If using frozen cranberries, do not thaw them first.
