Instructions
Step 1: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.
Step 2: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
Step 3: In a medium bowl, whisk together the granulated sugar, brown sugar, eggs, oil, sour cream, and vanilla extract until smooth.
Step 4: Gently fold the wet ingredients into the dry ingredients using a spatula until just combined. Do not overmix.
Step 5: Fold in the diced apples and toasted walnuts until evenly distributed throughout the batter.
Step 6: Divide the batter evenly among the 12 muffin cups, filling them almost to the top.
Step 7: Bake for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Step 8: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For the best results, ensure your eggs and sour cream are at room temperature. Toasting the walnuts is optional but highly recommended for depth of flavor.
