Ingredients
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/2 tsp salt
2 large eggs
1/2 cup brown sugar, packed
1/2 cup vegetable oil
1 tsp vanilla extract
1 1/2 cups grated carrots (about 3 medium carrots)
1 cup Medjool dates, pitted and chopped
4 oz cream cheese, softened (for frosting)
2 tbsp unsalted butter, softened (for frosting)
3 tbsp pure maple syrup (for frosting)
1/2 cup powdered sugar (for frosting)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan, lining it with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt until well combined.
Step 3: In a larger bowl, beat the eggs and brown sugar until the mixture is smooth and slightly bubbly.
Step 4: Slowly whisk in the vegetable oil and vanilla extract until the wet ingredients are fully emulsified.
Step 5: Fold in the freshly grated carrots and chopped Medjool dates into the wet mixture using a spatula.
Step 6: Gradually add the dry ingredients to the wet mixture, stirring gently just until no streaks of flour remain. Do not overmix.
Step 7: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Step 8: Bake for 50-55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Step 9: Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Step 10: While the loaf cools, prepare the maple cream by beating the cream cheese, butter, maple syrup, and powdered sugar until light and fluffy.
Step 11: Spread the maple cream frosting generously over the top of the cooled loaf before slicing and serving.
Notes
Ensure carrots are freshly grated for maximum moisture. Medjool dates are preferred for their soft texture.
