Ingredients
2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 3/4 cups buttermilk
2 large eggs
4 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract
1 cup fresh cranberries, halved
1 medium apple (Granny Smith), finely diced
Instructions
Step 1: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
Step 2: In a medium bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until well combined.
Step 3: Pour the wet ingredients into the dry ingredients. Use a spatula to fold the mixture together until just combined; do not over-mix.
Step 4: Gently fold the halved cranberries and diced apples into the batter of the spiced cranberry and apple pancakes.
Step 5: Heat a lightly greased griddle or skillet over medium heat. Pour 1/4 cup of batter for each pancake.
Step 6: Cook until bubbles form on the surface, then flip and cook until the other side is golden brown, approximately 2-3 minutes per side.
Step 7: Serve the spiced cranberry and apple pancakes warm with maple syrup and extra fruit if desired.
Notes
Use room temperature buttermilk to prevent the butter from seizing.
