Ingredients
8 cups brioche or challah bread, cubed (about 1 pound)
2 large Bosc pears, cored and thinly sliced
1 cup fresh or frozen cranberries
4 large eggs
1.5 cups whole milk
1.5 cups heavy cream
3/4 cup packed light brown sugar
1.5 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons unsalted butter, melted (for greasing and topping)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and generously grease a 9×13 inch baking dish with butter.
Step 2: In a large mixing bowl, combine the cubed bread, sliced pears, and cranberries. Gently toss them together so the fruit is evenly distributed.
Step 3: In a separate medium bowl, whisk together the eggs, brown sugar, milk, heavy cream, cinnamon, ginger, nutmeg, vanilla extract, and salt until the sugar is dissolved and the mixture is smooth.
Step 4: Pour the egg and milk mixture over the bread and fruit. Use a spatula to gently press the bread down, ensuring every piece is well-coated with the custard.
Step 5: Allow the spiced cranberry and pear bread pudding to sit for at least 30 minutes at room temperature (or cover and refrigerate overnight) to allow the bread to absorb the liquid.
Step 6: Bake in the preheated oven for 45 to 55 minutes, or until the top is golden brown and the custard is set but still slightly wobbly in the very center.

Notes
For best results, use day-old bread. If using fresh bread, toast the cubes in the oven at 300°F for 10 minutes to dry them out before assembling.
