Ingredients
6 large Bosc pears, peeled, cored, and sliced
2 cups fresh or frozen cranberries
1/2 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 cup old-fashioned rolled oats
1 cup all-purpose flour
1 cup brown sugar, packed
1/2 cup unsalted butter, cold and cubed
1/4 teaspoon salt
Instructions
Step 1: Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
Step 2: In a large mixing bowl, combine the sliced pears, cranberries, granulated sugar, lemon juice, cornstarch, 1/2 teaspoon of cinnamon, and the ginger. Toss well to coat the fruit evenly.
Step 3: Transfer the fruit mixture into the prepared baking dish and spread it out into an even layer.
Step 4: In another bowl, combine the oats, flour, brown sugar, remaining 1/2 teaspoon of cinnamon, and salt.
Step 5: Using a pastry blender or your fingertips, work the cold cubed butter into the oat mixture until it resembles coarse crumbs with some pea-sized pieces.
Step 6: Sprinkle the crumble topping evenly over the pear and cranberry mixture.
Step 7: Bake for 40 to 45 minutes, or until the topping is golden brown and the fruit filling is bubbling.
Step 8: Remove from the oven and let the spiced cranberry pear crisp cool for at least 15 minutes before serving warm.
Notes
Use firm pears like Bosc to ensure they don’t get too mushy during the long bake time.
