Ingredients
250g Medjool dates, pitted and chopped
1 tsp baking soda
250ml boiling water
125g unsalted butter, softened
150g light brown sugar
2 large eggs
1 tsp vanilla extract
250g all-purpose flour
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
100g walnuts, toasted and roughly chopped
Zest of 1 large orange
150g powdered sugar (for drizzle)
2–3 tbsp fresh orange juice (for drizzle)
Instructions
Step 1: Preheat your oven to 180°C (350°F) and grease a 9-inch loaf pan or line it with parchment paper.
Step 2: Place the chopped dates and baking soda in a heatproof bowl. Pour the boiling water over them and let soak for 10-15 minutes until softened.
Step 3: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
Step 4: Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
Step 5: Sift the flour, cinnamon, ginger, and cloves into the wet mixture. Gently fold until just combined.
Step 6: Stir in the soaked date mixture (including the liquid), the orange zest, and the chopped walnuts.
Step 7: Pour the batter into the prepared pan and bake for 45-50 minutes, or until a skewer inserted into the center comes out clean.
Step 8: While the cake cools slightly, whisk together the powdered sugar and orange juice to create a smooth drizzle.
Step 9: Poke holes in the warm cake with a skewer and pour half the drizzle over. Once completely cool, pour the remaining drizzle on top.
Notes
Ensure dates are finely chopped to allow them to disperse evenly through the batter. For a crunchier top, add a few extra walnut halves before baking.
