0.5 cup buttermilk
1 cup Medjool dates, pitted and chopped
0.5 cup walnuts, toasted and chopped
1 cup powdered sugar (for drizzle)
2–3 tbsp fresh orange juice
1 tbsp orange zest

Instructions

Step 1: Preheat your oven to 350°F (175°C) and line a 12-cup cupcake tin with paper liners.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, and nutmeg until well combined.
Step 3: In a large mixing bowl, cream the softened butter and brown sugar together using an electric mixer until the mixture is light and fluffy, about 3 minutes.
Step 4: Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
Step 5: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until combined.
Step 6: Gently fold in the chopped dates and toasted walnuts using a spatula to ensure even distribution without over-mixing.
Step 7: Scoop the batter into the prepared cupcake liners, filling each about three-quarters full. Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: While the cupcakes cool, whisk together the powdered sugar, orange juice, and orange zest in a small bowl to create the drizzle. Spoon over the slightly warm cupcakes before serving.

Notes

For the best results, ensure your butter and eggs are at room temperature before starting. If the drizzle is too thick, add a few more drops of orange juice; if too thin, add more powdered sugar.
