Ingredients
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground cardamom
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs, room temperature
1/2 cup whole milk
1 tsp vanilla extract
6–8 medium plums, pitted and sliced
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan with butter or non-stick spray.
Step 2: In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, ginger, and cardamom.
Step 3: In a separate large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
Step 4: Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
Step 5: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
Step 6: Pour the batter into the prepared pan and arrange the plum slices on top in a circular pattern.
Step 7: Bake for 45-50 minutes, or until a toothpick inserted into the cake part comes out clean. Let cool for 10 minutes before removing from the pan.
Notes
For best results, use Italian prune plums and ensure your eggs and milk are at room temperature.
