Ingredients
8 oz cream cheese, softened
1/4 cup powdered sugar
1/3 cup pumpkin puree (blotted)
2.5 cups graham cracker crumbs
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
12 oz white chocolate melting wafers
Optional: pumpkin pie spice for dusting
Instructions
Step 1: In a large mixing bowl, beat the softened cream cheese and powdered sugar together until light and fluffy.
Step 2: Stir in the blotted pumpkin puree, cinnamon, ginger, and cloves until well combined.
Step 3: Gradually add the graham cracker crumbs, mixing until a thick dough forms that can be easily rolled into balls.
Step 4: Cover the bowl and refrigerate the mixture for at least 1 hour to allow it to firm up.
Step 5: Line a baking sheet with parchment paper. Roll the dough into 1-inch balls and place them on the sheet.
Step 6: Melt the white chocolate according to package instructions. Using a fork, dip each ball into the chocolate, let the excess drip off, and return to the parchment paper.
Step 7: Sprinkle with a dash of pumpkin pie spice while the chocolate is still wet. Refrigerate until the chocolate is set.
Notes
Ensure you blot the pumpkin puree with paper towels to remove moisture, otherwise the truffles may be too soft to roll.
