1 tbsp finely chopped well-fermented Kimchi
0.5 oz (15ml) Kimchi brine
0.25 tsp Gochujang (Korean chili paste), or more to taste
0.5 oz (15ml) Fresh lime juice
0.25 oz (7.5ml) Simple syrup (adjust to sweetness preference)
Ice
Lime wedge, for garnish
Pinch of Gochugaru (Korean chili powder), for garnish (optional)
Instructions
Step 1: In a cocktail shaker, combine the chopped kimchi, kimchi brine, gochujang, and lime juice. Muddle gently for about 30 seconds to release the flavors.
Step 2: Add the soju, simple syrup, and a generous handful of ice to the shaker.
Step 3: Secure the lid and shake vigorously for 15-20 seconds until well-chilled.
Step 4: Double-strain the mixture into a chilled rock glass filled with fresh ice.
Step 5: Garnish with a lime wedge and a sprinkle of gochugaru, if desired. Serve immediately and enjoy your Spicy Korean Kimchi Soju Cocktail!
Notes
