2 fresh limes, juiced
1 teaspoon lime zest

Instructions
Step 1: Prepare the watermelon by cutting off both ends so it can stand securely on a cutting board.
Step 2: Slice the watermelon into 1-inch thick rounds. Carefully trim away the green rind and white pith from each round.
Step 3: Cut the watermelon rounds into uniform sticks, approximately 1 inch wide and 3-4 inches long, to resemble fries.
Step 4: Arrange the watermelon sticks on a large serving platter or in a bowl. For maximum crispness, chill the sliced fries in the refrigerator for 20 minutes.
Step 5: Drizzle the fresh lime juice and sprinkle the lime zest over the watermelon sticks.
Step 6: Dust the fries generously with the Tajín seasoning, ensuring an even coating on all sides.
Step 7: Garnish with fresh mint if desired and serve your spicy watermelon fries immediately while cold.
Notes
For best results, consume immediately as the salt in the seasoning will cause the watermelon to release its juices over time.
