Sparkling Berry Mint Refresher Mocktail

Ingredients

1 cup mixed berries (strawberries, raspberries, blueberries), fresh or frozen and thawed
8–10 fresh mint leaves, plus more for garnish
1 tablespoon fresh lime juice
2–3 tablespoons simple syrup (or maple syrup/honey to taste)
1 cup sparkling water or club soda, chilled
Ice cubes
Lime slices or extra berries for garnish

Instructions

Step 1: In a sturdy glass or cocktail shaker, combine the mixed berries and mint leaves.
Step 2: Gently muddle the berries and mint together using a muddler or the back of a wooden spoon. The goal is to bruise the mint and lightly crush the berries to release their juices, not to pulverize them into a paste.
Step 3: Add the fresh lime juice and simple syrup to the muddled mixture. Stir well to combine. Taste and adjust sweetness if desired; you might want more or less depending on the sweetness of your berries.
Step 4: Divide the berry-mint mixture evenly between two serving glasses. Fill the glasses generously with ice cubes.
Step 5: Top each glass with chilled sparkling water or club soda. Stir gently to combine the ingredients without losing too much of the fizz.
Step 6: Garnish each glass with a few extra fresh berries, a sprig of mint, and a slice of lime. Serve immediately and enjoy!

Notes

For a sweeter mocktail, increase the simple syrup. For a less sweet option, reduce or omit the simple syrup and let the natural sweetness of the berries shine. You can also experiment with different types of berries or add a splash of fruit juice like cranberry or pineapple for extra flavor.
