Ingredients
12 large rice paper wrappers (8.5 inch diameter)
1/2 lb medium shrimp, cooked, peeled, deveined, and halved lengthwise
4 oz thin rice vermicelli noodles, cooked according to package directions and drained
1 head butter lettuce or green leaf lettuce, washed and dried, torn into manageable pieces
1 large carrot, julienned
1/2 English cucumber, julienned
1/2 cup fresh mint leaves
1/2 cup fresh cilantro leaves
1/4 cup fresh Thai basil leaves (optional, but recommended)
For Peanut Dipping Sauce:
1/4 cup creamy peanut butter
2 tbsp hoisin sauce
1 tbsp lime juice
1 tbsp soy sauce (or tamari for gluten-free)
1 tbsp warm water (or more for desired consistency)
1 tsp sriracha (optional, for heat)
1 clove garlic, minced
1 tsp honey or maple syrup (optional, for sweetness)
Instructions
Step 1: Prepare all fillings: Cook shrimp if not pre-cooked. Peel, devein, and slice in half lengthwise. Cook vermicelli noodles according to package instructions, drain, and rinse with cold water to prevent sticking. Prepare all vegetables and herbs by washing, drying, and slicing them into thin, manageable pieces.
Step 2: Arrange all prepared ingredients neatly on a large platter or cutting board, ready for rolling. This is your spring roll assembly line.
Step 3: Prepare the peanut dipping sauce: In a small bowl, whisk together peanut butter, hoisin sauce, lime juice, soy sauce, warm water, sriracha (if using), minced garlic, and honey/maple syrup until smooth and well combined. Add more water if needed to reach desired consistency. Set aside.
Step 4: Fill a shallow dish (like a pie plate) with warm water. The dish should be wider than your rice paper wrappers.
Step 5: Take one rice paper wrapper and submerge it in the warm water for about 15-20 seconds. It should be pliable but still slightly firm, as it will continue to soften. Do not over-soak.
Step 6: Carefully lay the softened wrapper flat on a clean, damp work surface (a cutting board or a damp kitchen towel works well).
Step 7: Place a small piece of lettuce on the bottom third of the wrapper, leaving about an inch clear on the sides. Top with a small amount of vermicelli noodles, julienned carrots, and cucumber.
Step 8: Just above the other fillings, place 2-3 shrimp halves horizontally, cut-side up for a nice presentation. Add a few leaves of mint, cilantro, and Thai basil on top of or next to the shrimp.
Step 9: Fold the bottom edge of the wrapper up and over the fillings, tucking it in snugly to create a tight roll.
Step 10: Fold in both side flaps of the wrapper towards the center, ensuring the filling is neatly contained.
Step 11: Tightly roll the spring roll upwards from the bottom until you have a firm, neat cylinder. The tighter the roll, the better it will hold together.
Step 12: Place the finished spring roll seam-side down on a serving platter. Repeat with the remaining wrappers and fillings. Serve immediately with the prepared peanut dipping sauce.
Notes
For best results, prepare all your ingredients before you start rolling. This makes the process much smoother and more enjoyable. Don’t overfill the wrappers, as they can tear easily. If you have trouble with wrappers sticking, lightly dampen your work surface. Leftover spring rolls are best stored in an airtight container in the refrigerator and consumed within 1-2 days.
