Instructions

Step 1: Prepare Your Ingredients: Gather all your ingredients. Pat the chicken thighs dry with paper towels and season them generously with salt and black pepper. Slice your baby potatoes in half or quarters, depending on their size, so they cook evenly. Mince your garlic, and roughly chop your fresh dill and parsley. Step 2: Sear the Chicken: In a large Dutch oven or a heavy-bottomed pot, heat the olive oil over medium-high heat. Once the oil is shimmering, add the seasoned chicken thighs. Sear for 4-5 minutes per side until beautifully golden brown. This searing step is crucial as it locks in flavor and creates a delicious fond at the bottom of the pot. Remove the chicken from the pot and set aside.

Bring the pot back to a gentle simmer, then reduce the heat to low, cover, and let it cook for 15-20 minutes, or until the chicken is cooked through and the potatoes are tender when pierced with a fork.
