Simple Sautéed Garlic Herb Yellow Squash

4 medium yellow squash (about 1.5 lbs), trimmed and sliced into 1/2-inch rounds
2 tbsp extra virgin olive oil
4 cloves garlic, minced
1 tsp fresh thyme leaves, chopped
1 tsp fresh oregano leaves, chopped
1/2 tsp sea salt, or to taste
1/4 tsp black pepper, or to taste
Optional: a squeeze of fresh lemon juice for serving

Instructions

Step 1: Wash the yellow squash thoroughly and pat dry. Trim off both ends. Slice the squash into uniform 1/2-inch thick rounds or half-moons.
Step 2: In a large skillet or frying pan, heat the olive oil over medium heat until shimmering.
Step 3: Add the minced garlic to the hot oil and sauté for about 30 seconds, stirring constantly, until it becomes fragrant but not browned.
Step 4: Add the sliced yellow squash to the skillet. Season generously with salt and black pepper. Toss to coat the squash evenly with the garlic-infused oil.
Step 5: Cook for 5-7 minutes, stirring occasionally, until the squash begins to soften and develops a slight golden-brown sear on the edges.
Step 6: Stir in the fresh thyme and oregano. Continue to cook for another 3-5 minutes, or until the squash is tender-crisp. Avoid overcooking to prevent mushiness.
Step 7: Taste the squash and adjust seasoning as needed. For an extra bright flavor, add a squeeze of fresh lemon juice.
