Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan thoroughly with butter or non-stick spray.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
Step 3: In a large mixing bowl, beat the eggs and sugar together until the mixture is light and pale in color, then slowly stream in the vegetable oil while continuing to beat.
Step 4: Mix in the sour cream, lemon zest, lemon extract, and 2 tablespoons of lemon juice until the batter is smooth.
Step 5: Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula just until no flour streaks remain.
Step 6: Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: While the loaf cools, whisk together the powdered sugar, lemon juice, and cream to create a thick, pourable glaze.
Step 8: Once the loaf is completely cool, pour the glaze over the top, letting it drip down the sides before slicing.
Notes
Ensure all ingredients are at room temperature for the best texture. Do not overbake or the loaf will become dry.
