Ingredients
1.5 lbs Top Sirloin or Ribeye steak, cut into 1-inch cubes
2 tablespoons avocado oil or olive oil
3 tablespoons unsalted butter
4 cloves garlic, smashed
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 sprig fresh rosemary or thyme (optional)
Fresh parsley for garnish
Instructions
Step 1: Pat the steak cubes dry with paper towels and season thoroughly with salt and black pepper.
Step 2: Heat a large cast-iron skillet over high heat until it begins to smoke slightly, then add the oil.
Step 3: Place the steak cubes in the skillet in a single layer, ensuring they are not crowded. Sear for 2 minutes without moving them.
Step 4: Flip the pieces and sear for another 2 minutes to develop a brown crust on all sides.
Step 5: Reduce the heat to medium and add the butter, smashed garlic, and rosemary/thyme to the pan.
Step 6: Use a spoon to baste the steak bites with the melting butter for 1-2 minutes until the garlic is fragrant.
Step 7: Remove from heat and garnish with chopped parsley. Let rest for 2 minutes before serving.
Notes
Make sure the pan is very hot before adding the meat to ensure a proper sear.
