Ingredients
1.5 lbs sirloin, ribeye, or tenderloin steak, cut into 1-inch cubes
2 tablespoons olive oil, divided
4 tablespoons unsalted butter
4–6 cloves garlic, minced
2 sprigs fresh rosemary
2 sprigs fresh thyme
1/4 cup fresh parsley, chopped
Salt and freshly ground black pepper, to taste
Instructions
Step 1: Pat the steak cubes thoroughly dry with paper towels. Season generously on all sides with salt and freshly ground black pepper.
Step 2: Heat a large, heavy-bottomed skillet (preferably cast iron) over medium-high heat. Add 1 tablespoon of olive oil. Once the pan is hot and slightly smoking, add half of the steak cubes in a single layer, ensuring not to overcrowd the pan.
Step 3: Sear the steak for 1-2 minutes per side until a deep golden-brown crust forms. Remove the seared steak to a clean plate. Repeat with the remaining steak cubes, adding another tablespoon of olive oil if needed.
Step 4: Once all the steak is seared and removed from the pan, reduce the heat to medium-low. Add the butter, minced garlic, fresh rosemary sprigs, and fresh thyme sprigs to the pan. Cook, stirring frequently, until the butter is melted and fragrant, about 1 minute. Be careful not to burn the garlic.
Step 5: Return all the seared steak bites to the pan. Spoon the garlic herb butter over the steak, tossing gently to coat all the pieces. Cook for another 30 seconds to 1 minute, just to warm the steak through and ensure it’s fully coated in the sauce.
Step 6: Remove the pan from heat. Stir in the fresh chopped parsley. Taste and adjust seasoning if necessary. Serve immediately and enjoy your perfect garlic butter steak bites!
Notes
For best results, use a heavy-bottomed pan, like cast iron, to achieve a good sear. Do not overcrowd the pan; cook the steak in batches if necessary. Adjust seasoning to your preference.
