Ingredients
1.5 lbs Flank steak or Ribeye
6 cups Mixed baby greens (Arugula, Spinach, Romaine)
1 cup Cherry tomatoes, halved
1 large Cucumber, sliced
1/2 Red onion, thinly sliced
1/4 cup Extra virgin olive oil
3 tbsp Aged balsamic vinegar
1 tsp Dijon mustard
1 clove Garlic, minced
Salt and black pepper to taste
1/4 cup Crumbled blue cheese or feta (optional)
Instructions
Step 1: Remove the steak from the refrigerator 30 minutes before cooking to bring it to room temperature. Pat dry with paper towels.
Step 2: Season both sides of the steak generously with salt and pepper.
Step 3: Heat a cast-iron skillet over high heat with a tablespoon of oil until shimmering.
Step 4: Sear the steak for 4 minutes on the first side without moving it.
Step 5: Flip the steak and cook for another 3-5 minutes until the internal temperature reaches 135°F for medium-rare.
Step 6: Transfer the steak to a cutting board and let it rest for 10 minutes.
Step 7: In a small jar, whisk together olive oil, balsamic vinegar, mustard, and minced garlic to create the dressing for your steak salad recipe.
Step 8: In a large bowl, toss the greens, tomatoes, cucumber, and onion with half of the dressing.
Step 9: Slice the rested steak against the grain into thin strips.
Step 10: Arrange the steak over the salad, drizzle with the remaining dressing, and top with cheese if desired.
